A ROLL IN THE HAY!
YALUMBA, 2005 Wild Ferment Chardonnay, Eden Valley,
Light golden straw appeal to the eye as just a harbinger of things to come with this curious offering. Notes of yeast, nutmeg, cashews and lemon accent the dimensional EARTHY center of wet STRAW and HAY in this “wild” bouquet. This funky but intriguing nose results from the use of the natural or “wild” fermentation with only the indigenous yeasts present on the skin of the grapes at harvest. The weighty palate is deliciously coated with black fig, ripe pineapple, juicy peaches, “wild” honey and creamy cashew butter. The finish is balanced and lingering with a marvelous crisp acidity.
Risqué rolled in this delicious hay with some lovely artisan herbed Chevre cheese and black grapes… Wildly roll Risqué over and do it again!
